One day I was eating a pumpkin muffin that I had made for my family to enjoy. I had a pair of gliders under my shirt when I was enjoying one of these scrumptious and oh-so-moist muffins. Well, the male must have gotten a whiff of the muffin. He decided he HAD to have a piece of it, so he crept up from underneath my shirt and actually STOLE a piece of the muffin as I was taking a bite! He promptly took his treasure back down my shirt to share with his mate. I looked in to see the two of them happily munching on the muffin chunk. It was the cutest thing I have ever seen!
So that you can share this joy with your gliders, here is the recipe to make your own pumpkin muffins:
*Makes 24 muffins
Ingredients:
2 1/2 cups flour
3 cups sugar
2 teaspoons baking soda
1 teaspoon cinnamon
1 1/2 teaspoons salt
4 eggs
3/4 cup salad oil
1/2 cup water
2 cups canned pumpkin
1 cup chopped nuts (optional)
Instructions:
Preheat oven to 400. Sift dry ingredients together in a large bowl. Mix eggs, oil and water in a large bowl of a mixer. Gradually add dry ingredients, mixing to form a smooth batter. Add pumpkin and mix well. Fold in nuts. Pour into muffin tins that have been lined with paper liners. Fill each cup 2/3 full. Bake 15-20 minutes or until lightly browned.
***When I make the muffins for the gliders to enjoy, I omit the nuts! |
